You are taking corn to the big leagues! This isn't just a side dish. This is the main event! We are using that Abilene Select Blend to bring the heat and the citrus. You are gonna crush this meal! Your friends are gonna be begging for the recipe! Let's get grilling!

Ingredients

  • 8 ears fresh corn, husked and cut into 3-inch rounds
  • 4 tbsp Salted Perfection Abilene Select Blend
  • 3/4 cup mayonnaise
  • 1/2 cup sour cream
  • 1.5 cups Cotija cheese, finely crumbled
  • 1/2 cup fresh cilantro, finely chopped
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. Preheat your grill to medium-high heat! You want it screaming hot!
  2. Thread the corn rounds onto the soaked skewers. Use two skewers for each stack to keep them from spinning on the grill!
  3. Whisk together the mayonnaise, sour cream, and 2 tablespoons of the Salted Perfection Abilene Select Blend in a small bowl until smooth.
  4. Place the corn skewers on the grill. Cook them for about 8 to 10 minutes, turning often until they are charred and golden all over!
  5. Remove the corn from the heat. Immediately brush each piece generously with the mayo mixture while the corn is still piping hot!
  6. Roll the corn in the crumbled Cotija cheese. Press it on there so every kernel is covered!
  7. Sprinkle the remaining 2 tablespoons of Salted Perfection Abilene Select Blend and the fresh cilantro over the top for a final flavor punch.
  8. Serve these immediately while they are hot and juicy! DUNZO!
