There is a specific memory I have of Sunday mornings down the shore—the kitchen windows open, the smell of salt air mixing with sweet batter on the griddle. It brings a warmth to the chest just thinking about it. These pancake bites capture that exact feeling without the hassle of flipping flapjacks while everyone else is eating. The cottage cheese keeps them incredibly moist and protein-packed, while the finish of lemon salt wakes up the palate like a cool ocean breeze. It is nostalgia, served in a bite-sized package.

Made to serve: 3-4
Scale:

Ingredients

  • 1 cup cottage cheese (small curd works best)
  • 2 large eggs
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup fresh blueberries
  • Non-stick cooking spray
  • 1–2 tsp Salted Perfection Lemoncello Garnishing Salt, for finishing

Instructions

  1. Preheat your air fryer to 300°F (150°C). If your unit requires preheating, let it run for 3-5 minutes before cooking.
  2. In a blender or food processor, combine the cottage cheese, eggs, maple syrup, and vanilla extract. Blend until completely smooth and creamy. This step is crucial to remove the curd texture and ensure a consistent batter.
  3. Pour the wet mixture into a mixing bowl. Sift in the flour and baking powder, then whisk gently until just combined. Do not overmix, or the texture will become tough.
  4. Gently fold in the fresh blueberries with a spatula, being careful not to crush them into the batter.
  5. Lightly coat silicone muffin liners with non-stick cooking spray. Fill each liner about three-quarters of the way full with the batter.
  6. Place the filled liners into the air fryer basket, leaving a little space between them for airflow. You may need to work in batches depending on the size of your basket.
  7. Air fry for 10 to 12 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Remove the bites from the air fryer and let them cool for 2 minutes. While they are still warm, sprinkle the tops generously with the Salted Perfection Lemoncello Garnishing Salt to accentuate the blueberry flavor.
  9. DUNZO!

Tony’s Fine Print

They tell me every recipe needs a little fine print, so here’s mine. I do my best to keep things straight, no surprises and no sneaky allergens. The info you see here is put together with care, capisce? But kitchens are wild places and ingredients do not always behave. Always double-check the labels on what you buy, especially if you have allergies or dietary restrictions. If something does not look right, trust your gut (and your doctor) before you trust me. Bottom line: I am here to guide, not to diagnose. You cook, you taste, you take responsibility.

Deal? Good. Now let’s eat.
