- 1 cup cottage cheese (small curd works best)
- 2 large eggs
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1 tsp baking powder
- 1/2 cup fresh blueberries
- Non-stick cooking spray
- 1–2 tsp Salted Perfection Lemoncello Garnishing Salt, for finishing
Instructions
- Preheat your air fryer to 300°F (150°C). If your unit requires preheating, let it run for 3-5 minutes before cooking.
- In a blender or food processor, combine the cottage cheese, eggs, maple syrup, and vanilla extract. Blend until completely smooth and creamy. This step is crucial to remove the curd texture and ensure a consistent batter.
- Pour the wet mixture into a mixing bowl. Sift in the flour and baking powder, then whisk gently until just combined. Do not overmix, or the texture will become tough.
- Gently fold in the fresh blueberries with a spatula, being careful not to crush them into the batter.
- Lightly coat silicone muffin liners with non-stick cooking spray. Fill each liner about three-quarters of the way full with the batter.
- Place the filled liners into the air fryer basket, leaving a little space between them for airflow. You may need to work in batches depending on the size of your basket.
- Air fry for 10 to 12 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Remove the bites from the air fryer and let them cool for 2 minutes. While they are still warm, sprinkle the tops generously with the Salted Perfection Lemoncello Garnishing Salt to accentuate the blueberry flavor.
