Ingredients

Servings (original: 4)
  • 2 large red bell peppers, sliced into 1/2-inch strips
  • 1 large yellow onion, cut into thin wedges
  • 2 cups mini tomatoes
  • 2 tbsp extra virgin olive oil
  • 3 tbsp Salted Perfection Santa Maria Select Blend
  • 2 tbsp fresh flat-leaf parsley, chopped

Step by step

  1. Place a large cast-iron skillet over medium-high heat and let it get hot enough that a drop of water dances on the surface.
  2. In a large bowl, toss the sliced peppers and onions with the olive oil and the Salted Perfection Santa Maria Select Blend until every piece is well-coated.
  3. Carefully add the peppers and onions to the hot skillet, spreading them out in a single layer to ensure they get a good sear.
  4. Let the vegetables cook undisturbed for 3 minutes to develop a deep char, then toss and continue cooking for another 4 minutes until they start to soften.
  5. Add the mini tomatoes to the pan and sauté for 3 more minutes, just until the skins begin to wrinkle and pop.
  6. Remove the pan from the heat, stir in the fresh parsley, and serve while it's still steaming. DUNZO!
