Ingredients

How many servings?

Choose a serving count to adjust ingredient amounts.

  • 3 lbs bone-in, skin-on chicken thighs
  • 4 tbsp Salted Perfection Key West Select Blend
  • 3 tbsp avocado oil
  • 1 large red onion, sliced into 1/2-inch rounds
  • 2 bell peppers, sliced into thick strips
  • 2 jalapeños, halved lengthwise
  • 1/2 cup fresh cilantro, chopped

Step by step

  1. Pat the chicken thighs bone-dry with paper towels. If there is moisture on the skin, you are going to steam the meat instead of searing it, and we want that crunch.
  2. Coat the chicken thoroughly with 3 tablespoons of the Salted Perfection Key West Select Blend. Press the spices into the skin so they stay put.
  3. Set your cast iron skillet over medium-high heat and add the avocado oil. Wait until the oil is shimmering and just starting to show a wisp of smoke.
  4. Lay the chicken in the pan skin-side down. Do not crowd them; if you need to work in batches to keep the heat up, do it. Leave them alone for about 8 to 10 minutes until the skin is dark golden and releases from the pan easily.
  5. Flip the chicken over. Scatter the sliced red onions, bell peppers, and jalapeños into the gaps between the chicken pieces.
  6. Sprinkle the remaining 1 tablespoon of the Key West Select Blend over the vegetables in the pan.
  7. Slide the whole skillet into a preheated 400°F oven. Roast for 15 to 20 minutes until the thickest part of the chicken hits an internal temperature of 165°F.
  8. Pull the pan out and let the meat rest for 5 minutes. This lets the juices settle back into the fibers so they do not run all over the plate when you cut in.
  9. Toss the fresh cilantro over the top and serve it straight from the iron. DUNZO!

From Tony’s kitchen

This is how you handle chicken when you want maximum flavor with zero fluff. We’re using a heavy skillet to get that skin properly crisp while the citrus and spices from the blend sink deep into the meat. It’s a one-pan move that respects the ingredients and your time.

Tony’s Fine Print

They tell me every recipe needs a little fine print, so here’s mine. I do my best to keep things straight, no surprises and no sneaky allergens. The info you see here is put together with care, capisce? But kitchens are wild places and ingredients do not always behave. Always double-check the labels on what you buy, especially if you have allergies or dietary restrictions. If something does not look right, trust your gut (and your doctor) before you trust me. Bottom line: I am here to guide, not to diagnose. You cook, you taste, you take responsibility.

Deal? Good. Now let’s eat.
