Made to serve: 3-4
Scale:

Ingredients

  • 4 ears of corn, husked
  • 3 Tbsp Salted Perfection Key West Select Blend
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1/2 cup crumbled cotija cheese
  • 2 Tbsp fresh cilantro, chopped
  • 1 lime, cut into wedges, for serving
  • Pinch of chili powder or paprika, for garnish (optional)

Instructions

  1. Preheat your grill to medium-high heat (about 400°F / 200°C). If you're using an oven, preheat it to 400°F (200°C) and line a baking sheet with foil.
  2. In a small mixing bowl, combine the mayonnaise, Greek yogurt, and 3 Tbsp Salted Perfection Key West Select Blend. Whisk it until it's smooth and creamy. Set that aside, it's gonna be good.
  3. Grill the husked corn directly on the grates, turning every few minutes, until the kernels are tender and get that beautiful char (about 10-15 minutes). If you're using the oven, place the corn on your prepared baking sheet and roast for 20-25 minutes, flipping them halfway through, until they're tender and lightly golden. You want that char, capisce? That's where the flavor lives!
  4. Once the corn is cooked, let it cool just a touch so you can handle it. Then, using a brush or a spoon, generously coat each ear of corn with that zesty Key West crema. Don't be shy with it!
  5. Sprinkle each ear liberally with the crumbled cotija cheese and the chopped fresh cilantro. For a little extra pop, hit it with a pinch of chili powder or paprika, if you're feeling fancy.
  6. Serve these beauties immediately with fresh lime wedges on the side. This ain't just corn, it's a masterpiece, a real knock-out!

Tony’s Fine Print

They tell me every recipe needs a little fine print, so here’s mine. I do my best to keep things straight, no surprises and no sneaky allergens. The info you see here is put together with care, capisce? But kitchens are wild places and ingredients do not always behave. Always double-check the labels on what you buy, especially if you have allergies or dietary restrictions. If something does not look right, trust your gut (and your doctor) before you trust me. Bottom line: I am here to guide, not to diagnose. You cook, you taste, you take responsibility.

Deal? Good. Now let’s eat.
