- 4 ears of corn, husked
- 3 Tbsp Salted Perfection Key West Select Blend
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 1/2 cup crumbled cotija cheese
- 2 Tbsp fresh cilantro, chopped
- 1 lime, cut into wedges, for serving
- Pinch of chili powder or paprika, for garnish (optional)
Instructions
- Preheat your grill to medium-high heat (about 400°F / 200°C). If you're using an oven, preheat it to 400°F (200°C) and line a baking sheet with foil.
- In a small mixing bowl, combine the mayonnaise, Greek yogurt, and 3 Tbsp Salted Perfection Key West Select Blend. Whisk it until it's smooth and creamy. Set that aside, it's gonna be good.
- Grill the husked corn directly on the grates, turning every few minutes, until the kernels are tender and get that beautiful char (about 10-15 minutes). If you're using the oven, place the corn on your prepared baking sheet and roast for 20-25 minutes, flipping them halfway through, until they're tender and lightly golden.
