This is a straightforward, high-impact appetizer that relies on quality shrimp and a sharp, smoky rub. It’s light, clean, and fits the bill for anyone dodging dairy or gluten without sacrificing a bit of flavor. You get the lime and chipotle right up front, followed by the natural sweetness of the shrimp.

Scale:

Ingredients

  • 2 lbs large shrimp (16-20 count), peeled and deveined
  • 3 tbsp Salted Perfection Carlisle Select Blend
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh Italian parsley, finely chopped
  • 12 wooden skewers, soaked in water for 30 minutes

Instructions

  1. Thread the shrimp onto the soaked wooden skewers, placing about 3 or 4 on each stick so they lay flat.
  2. In a small mixing bowl, whisk together the extra virgin olive oil and the Salted Perfection Carlisle Select Blend until well combined.
  3. Lay the skewers on a tray and brush the seasoned oil generously over both sides of the shrimp.
  4. Preheat your grill or a heavy cast-iron grill pan over medium-high heat until it is just starting to smoke.
  5. Place the skewers on the hot surface and cook for about 2 to 3 minutes per side. You are looking for the shrimp to turn opaque and develop a light char from the chipotle and paprika in the blend.
  6. Transfer the skewers to a serving platter and sprinkle the fresh parsley over the top for a clean finish. DUNZO!

Tony’s Fine Print

They tell me every recipe needs a little fine print, so here’s mine. I do my best to keep things straight, no surprises and no sneaky allergens. The info you see here is put together with care, capisce? But kitchens are wild places and ingredients do not always behave. Always double-check the labels on what you buy, especially if you have allergies or dietary restrictions. If something does not look right, trust your gut (and your doctor) before you trust me. Bottom line: I am here to guide, not to diagnose. You cook, you taste, you take responsibility.

Deal? Good. Now let’s eat.
