Ingredients

  • 2.5 lbs Top Sirloin or Ribeye, trimmed and cut into 1-inch cubes
  • 2 tbsp Avocado oil or Grapeseed oil (high smoke point is essential)
  • 3 tbsp Salted Perfection Fort Worth Select Blend
  • 1 tbsp Fresh flat-leaf parsley, finely chopped for garnish

Instructions

  1. Pat the beef cubes thoroughly dry with paper towels; any residual surface moisture will consume thermal energy as it evaporates, preventing the Maillard reaction from creating a proper crust.
  2. Place the beef in a large bowl and toss with the avocado oil to ensure every surface is coated, providing a consistent medium for heat transfer during the cooking process.
  3. Sprinkle the Salted Perfection Fort Worth Select Blend over the meat and toss again until the cubes are evenly coated and the charcoal has given the meat a uniform, dark appearance.
  4. Preheat your air fryer to 400°F for at least 5 minutes; a preheated environment is critical for the immediate denaturation of surface proteins which locks in moisture.
  5. Arrange the steak bites in the air fryer basket in a single layer, ensuring they are not touching; spacing is vital to allow the high-velocity air to circulate and dehydrate the surfaces evenly for a crisp finish.
  6. Cook for 5 to 7 minutes, shaking the basket once at the 3-minute mark to redistribute the pieces and expose all surfaces to the direct heat flow.
  7. Transfer the steak bites to a warm plate and allow them to rest for 3 to 4 minutes, which allows the internal pressure to stabilize and the juices to redistribute through the muscle fibers. DUNZO!
