Ingredients

  • 1 cup coconut milk (full fat)
  • 1/2 cup heavy cream
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1 tsp lime zest
  • 1 packet (2 1/4 tsp) unflavored gelatin
  • 3 TBS cold water
  • 1/2 cup fresh mango, peeled and diced
  • 1 TBS fresh lime juice
  • 1 tsp sugar
  • 4 tsp Salted Perfection Key West Select Blend 1/

Instructions

  1. In a small bowl, sprinkle gelatin over cold water and let bloom for 5 minutes. This is your magic glue, capisce?
  2. Meanwhile, in a saucepan, combine coconut milk, heavy cream, sugar, vanilla extract, and lime zest. Warm over medium heat until sugar dissolves and mixture is hot but not boiling – don’t burn it, we’re making love to flavors, not fighting a fire.
  3. Remove from heat and stir in the gelatin until completely dissolved. Let it cool slightly.
  4. Pour the panna cotta mixture into two 6-ounce ramekins or small glasses. Cover and refrigerate at least 4 hours or until set solid.
  5. While panna cotta chills, make the mango coulis: blend mango, lime juice, sugar, and Salted Perfection Key West Select Blend until smooth. The salt blend brings out the sweet like a boss.
  6. When panna cotta is set, spoon mango coulis over the top just before serving. If you’re feeling fancy, garnish with a little extra lime zest.
