Ingredients

  • 6 oz fresh crab meat, picked clean
  • 6 oz shrimp, peeled and finely chopped
  • 2 TBS finely chopped fresh cilantro
  • 1 tsp grated fresh ginger
  • 1 small garlic clove, minced
  • 1 TBS lime juice
  • 1 tsp Salted Perfection Lime Zest Finishing Salt
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 20 round dumpling wrappers
  • 1 TBS vegetable oil (for brushing)

Instructions

  1. In a bowl, combine crab meat, chopped shrimp, cilantro, ginger, garlic, lime juice, soy sauce, sesame oil, and Salted Perfection Lime Zest Finishing Salt. Mix gently but thoroughly — you want the flavors to marry like a good family reunion.
  2. Lay out a dumpling wrapper on a clean surface. Spoon about 1 tsp of filling into the center. Wet the edges of the wrapper with a little water to help seal.
  3. Fold the wrapper in half over the filling, pressing edges tightly to seal. Pleat the edges if you’re feeling fancy — it’s all about that grip, no leaks, no mess.
  4. Repeat with remaining wrappers and filling. You should get about 20 dumplings.
  5. Line a 8-inch round steamer basket with parchment paper or cabbage leaves to prevent sticking. Arrange dumplings inside, leaving space so they don’t stick together.
  6. Bring 2 inches of water to a boil in a wok or large pot. Place steamer basket over the boiling water, cover, and steam for 8-10 minutes until dumplings are plump and filling is cooked through.
