We're taking simple potatoes and giving them the Mediterranean treatment. Crisp edges, fluffy centers, and a hit of rosemary and citrus from the seasoning that wakes the whole thing up. It's effortless, but it tastes like you spent hours on it.

Ingredients

  • 1.5 lbs fingerling potatoes, scrubbed and halved lengthwise
  • 2 tbsp extra virgin olive oil
  • 1 tbsp Salted Perfection Santa Maria Select Blend
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F. We need high heat to get that golden crust, so don't be shy with the dial.
  2. In a large mixing bowl, toss the halved potatoes with the olive oil until they are slick and shiny.
  3. Sprinkle the Salted Perfection Santa Maria Select Blend over the potatoes and toss again to coat them evenly. You want that garlic and rosemary flavor on every bite.
  4. Arrange the potatoes cut-side down on a baking sheet. This is the secret to getting that seared, crispy face on the potato.
  5. Roast for 20 to 25 minutes, or until the bottoms are browned and the insides are tender when pierced with a fork.
  6. Transfer to a serving platter and scatter the fresh parsley over the top for a pop of color.
