Made to serve: 1-2
Scale:
Ingredients
- 1.5 lbs fingerling potatoes, scrubbed and halved lengthwise
- 2 tbsp extra virgin olive oil
- 1 tbsp Salted Perfection Santa Maria Select Blend
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat your oven to 400°F. We need high heat to get that golden crust, so don't be shy with the dial.
- In a large mixing bowl, toss the halved potatoes with the olive oil until they are slick and shiny.
- Sprinkle the Salted Perfection Santa Maria Select Blend over the potatoes and toss again to coat them evenly. You want that garlic and rosemary flavor on every bite.
- Arrange the potatoes cut-side down on a baking sheet. This is the secret to getting that seared, crispy face on the potato.
- Roast for 20 to 25 minutes, or until the bottoms are browned and the insides are tender when pierced with a fork.
- Transfer to a serving platter and scatter the fresh parsley over the top for a pop of color.
- DUNZO!
