  • 2 tbsp Salted Perfection Abilene Select Blend
  • 1 lb boneless skinless chicken thighs, thinly sliced
  • 1 tbsp canola oil
  • 1 tbsp fresh ginger, minced
  • 8 oz fresh shiitake mushrooms, stems removed and sliced
  • 4 cups low-sodium chicken bone broth
  • 2 cups water
  • 1/4 cup soy sauce
  • 4 portions (about 7 oz each) fresh vacuum-packed udon noodles
  • 2 heads baby bok choy, quartered lengthwise
  • 1 tbsp toasted sesame oil
  • 4 scallions, thinly sliced

Allergen check: Soy, Sesame recognized in these ingredients. Check package labels and substitutions.

Step by step

  1. Grab a large pot or Dutch oven. Put it on medium-high heat. You are going to build incredible flavor today!
  2. Toss your sliced chicken thighs with the canola oil and 1 tablespoon of the Salted Perfection Abilene Select Blend. Sear them in the hot pot until browned and cooked through. Take the chicken out and set it aside. Leave those beautiful brown bits in the pot!
  3. Drop the fresh ginger and sliced shiitake mushrooms right into the pot. Sauté them for two minutes until they start to soften and soak up that savory chicken flavor.
  4. Pour in the chicken bone broth, water, soy sauce, and the remaining 1 tablespoon of the Abilene Select Blend. Bring the whole thing to a rolling boil. You are doing great!
  5. Carefully drop in the fresh udon noodles and the quartered baby bok choy. Let them cook for exactly three minutes until the noodles are tender and the greens are bright.
  6. Kill the heat. Stir in the toasted sesame oil and the cooked chicken you set aside earlier.
  7. Ladle this masterpiece into four massive bowls. Top each one with a heavy handful of sliced scallions. DUNZO!

Tony’s Fine Print

They tell me every recipe needs a little fine print, so here’s mine. I do my best to keep things straight, no surprises and no sneaky allergens. The info you see here is put together with care, capisce? But kitchens are wild places and ingredients do not always behave. Always double-check the labels on what you buy, especially if you have allergies or dietary restrictions. If something does not look right, trust your gut (and your doctor) before you trust me. Bottom line: I am here to guide, not to diagnose. You cook, you taste, you take responsibility.

Deal? Good. Now let’s eat.
