Ingredients

  • 1 large shallot, thinly sliced
  • 3 cloves fresh garlic, smashed and minced
  • 1 tbsp fresh ginger, finely grated
  • 1 tsp ground turmeric
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 4 cups high-quality chicken bone broth
  • 1 (13.5 oz) can full-fat coconut milk
  • 1 cup jasmine rice, rinsed until the water runs clear
  • 1 bunch fresh cilantro, leaves meticulously picked
  • 1 fresh lime, cut into wedges

Instructions

  1. Place a heavy-bottomed Dutch oven over medium heat and melt the coconut oil. We want to gently coax the flavor out of our aromatics, so take your time. Add the sliced shallot, smashed garlic, and fresh grated ginger. Sauté until the alliums become translucent and release their pure, intoxicating oils.
  2. Stir in the ground turmeric and let it toast in the hot fat for exactly thirty seconds. Add the bite-sized chicken thighs, tossing them thoroughly to coat the meat in that deeply fragrant, golden base.
  3. Pour in the high-quality chicken bone broth and the thick, rich coconut milk. Stir with intention to meld the coconut cream into the broth, then bring the liquid to a very gentle, rolling simmer. Do not boil it violently.
  4. Scatter the rinsed jasmine rice into the pot. Lower the heat to maintain a soft simmer, cover tightly, and allow the magic to happen for 15 to 18 minutes. We are looking for tender, swollen grains of rice and perfectly cooked chicken.
