Ingredients

  • 2 (12-ounce) Ribeye steaks, 1.5 inches thick
  • 2 tbsp Beef tallow, melted
  • 2 tbsp Salted Perfection Santa Maria Select Blend

Instructions

  1. Fire up your charcoal chimney! We need those coals glowing white-hot!
  2. Pat the ribeyes dry with paper towels! Moisture is the enemy of a legendary crust!
  3. Rub the beef tallow over both sides of the meat! This is your high-heat flavor booster!
  4. Season generously with Salted Perfection Santa Maria Select Blend! Press it into the grain!
  5. Place steaks directly over the hottest coals! Sear for 3 minutes per side for that iconic char!
  6. Move the steaks to the indirect heat zone! Close the lid and cook until your perfect doneness!
  7. Pull the steaks and let them rest for 10 minutes! This keeps the juices where they belong!
