Ingredients
- 3 lbs pork shoulder, trimmed
- 1 cup pineapple juice
- 1/2 cup ketchup
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar, packed
- 2 tbsp soy sauce
- 2 tbsp molasses
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Salted Perfection Applewood Smoked Garnishing Salt
- 1/2 tsp black pepper
- 1 fresh pineapple, peeled, cored and cut into 1/2 inch rings
- 12 slider buns
- 2 cups shredded green cabbage
- 1 cup shredded carrot
- 2 tbsp mayonnaise
- 1 tbsp rice vinegar
- 1 tsp honey
- 1 tsp grated fresh ginger
- 1 tbsp chopped green onion
- 1 tbsp vegetable oil
Instructions
- Preheat oven to 300°F. Grab a 9x13 inch roasting pan or Dutch oven, this is where the magic happens.
- In a bowl, whisk together pineapple juice, ketchup, apple cider vinegar, brown sugar, soy sauce, molasses, Worcestershire sauce, smoked paprika, garlic powder, onion powder, Salted Perfection Applewood Smoked Garnishing Salt, and black pepper until well combined.
- Pat the pork shoulder dry, then place it fat side up in the roasting pan. Pour the BBQ pineapple sauce over the pork, cover tightly with foil or lid.
- Roast in the oven for about 4 hours or until the pork is fork-tender and shreddable. Halfway through, baste the pork with pan juices to keep it juicy.
- While pork roasts, mix cabbage, carrot, mayonnaise, rice vinegar, honey, ginger, and green onion in a bowl. Chill slaw in fridge until ready to serve.
- Heat a grill pan or cast iron skillet over medium-high. Brush pineapple rings with vegetable oil and grill 2-3 minutes per side until caramelized and grill marks appear. Set aside.
- Remove pork from oven and shred with two forks directly in the pan, mixing it with the remaining sauce. Keep warm.
- Slice slider buns in half and toast lightly on the grill or skillet until golden.
- Assemble sliders: pile generous pulled pork on each bun bottom, top with grilled pineapple ring and a spoonful of zesty slaw. Cap with bun tops.
