Ingredients
- 2 cups Almond flour
- 1 cup Low-fat cottage cheese, blended until smooth
- 2 large Eggs
- 1/2 cup Granulated monk fruit sweetener
- 1 tbsp Baking powder
- 1 tsp Vanilla extract
- 1 cup Fresh blueberries
- 1 tbsp Salted Perfection Cinnamon Vanilla Finishing Salt
Instructions
- Preheat your oven to 350 degrees! Line your muffin tin and get focused!
- Whisk the eggs, blended cottage cheese, monk fruit, and vanilla in a large bowl until the mixture is smooth!
- Stir in the almond flour, baking powder, and 2 teaspoons of the Salted Perfection Cinnamon Vanilla Finishing Salt! Mix it until just combined!
- Gently fold in those blueberries! Do not crush them! We want those big juice explosions!
- Divide the batter evenly into 8 muffin cups. They should be nearly full!
- Bake for 25 to 30 minutes! You are looking for a beautiful golden brown top!
- Remove from the oven and let them cool for five minutes! Stay patient!
- Sprinkle the remaining teaspoon of Salted Perfection Cinnamon Vanilla Finishing Salt over the warm tops! DUNZO!
