Ingredients

  • 2 cups Almond flour
  • 1 cup Low-fat cottage cheese, blended until smooth
  • 2 large Eggs
  • 1/2 cup Granulated monk fruit sweetener
  • 1 tbsp Baking powder
  • 1 tsp Vanilla extract
  • 1 cup Fresh blueberries
  • 1 tbsp Salted Perfection Cinnamon Vanilla Finishing Salt

Instructions

  1. Preheat your oven to 350 degrees! Line your muffin tin and get focused!
  2. Whisk the eggs, blended cottage cheese, monk fruit, and vanilla in a large bowl until the mixture is smooth!
  3. Stir in the almond flour, baking powder, and 2 teaspoons of the Salted Perfection Cinnamon Vanilla Finishing Salt! Mix it until just combined!
  4. Gently fold in those blueberries! Do not crush them! We want those big juice explosions!
  5. Divide the batter evenly into 8 muffin cups. They should be nearly full!
  6. Bake for 25 to 30 minutes! You are looking for a beautiful golden brown top!
  7. Remove from the oven and let them cool for five minutes! Stay patient!
  8. Sprinkle the remaining teaspoon of Salted Perfection Cinnamon Vanilla Finishing Salt over the warm tops! DUNZO!
