Ingredients

  • 1 lb ground turkey
  • 1 tsp Salted Perfection Key West Select Blend
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 2 cloves garlic minced
  • 1 small jalapeño seeded and finely chopped
  • 2 tsp olive oil
  • Zest of 1 lime
  • 2 TBS fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Rinse jasmine rice under cold water until water runs clear to remove excess starch – this keeps it fluffy, capisce?
  2. In a medium saucepan, combine the rinsed rice, coconut milk, and water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15 minutes or until liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes.
  3. While rice cooks, heat olive oil in a 10-inch skillet over medium-high heat. Add diced red onion, bell pepper, jalapeño, and garlic. Sauté for 3-4 minutes until softened and aromatic.
  4. Add ground turkey to the skillet. Break it up with a wooden spoon and cook until browned and no pink remains, about 7 minutes.
  5. Season the turkey mixture with Salted Perfection Key West Select Blend, salt, and black pepper to taste. Stir well to coat all that juicy meat with flavor.
  6. Fluff the coconut lime rice with a fork. Stir in lime zest, lime juice, and chopped cilantro. Adjust seasoning with salt if needed.
  7. Plate a generous scoop of coconut lime rice and top it with the spicy ground turkey mixture. Serve hot and watch your guests do the happy dance.
