Ingredients
- 1 lb ground turkey
- 1 tsp Salted Perfection Key West Select Blend
- 1 cup jasmine rice
- 1 cup coconut milk
- 1 cup water
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 2 cloves garlic minced
- 1 small jalapeño seeded and finely chopped
- 2 tsp olive oil
- Zest of 1 lime
- 2 TBS fresh lime juice
- 1/4 cup chopped fresh cilantro
- Salt to taste
- Black pepper to taste
Instructions
- Rinse jasmine rice under cold water until water runs clear to remove excess starch – this keeps it fluffy, capisce?
- In a medium saucepan, combine the rinsed rice, coconut milk, and water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15 minutes or until liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes.
- While rice cooks, heat olive oil in a 10-inch skillet over medium-high heat. Add diced red onion, bell pepper, jalapeño, and garlic. Sauté for 3-4 minutes until softened and aromatic.
- Add ground turkey to the skillet. Break it up with a wooden spoon and cook until browned and no pink remains, about 7 minutes.
- Season the turkey mixture with Salted Perfection Key West Select Blend, salt, and black pepper to taste. Stir well to coat all that juicy meat with flavor.
- Fluff the coconut lime rice with a fork. Stir in lime zest, lime juice, and chopped cilantro. Adjust seasoning with salt if needed.
- Plate a generous scoop of coconut lime rice and top it with the spicy ground turkey mixture. Serve hot and watch your guests do the happy dance.
