  • 2 tbsp Salted Perfection Key West Select Blend
  • 4 large eggs
  • 1 tbsp olive oil
  • 1/2 red bell pepper, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese

Allergen check: Milk, Egg recognized in these ingredients. Check package labels and substitutions.

Step by step

  1. Whisk the eggs in a bowl with 1 tablespoon of the Salted Perfection Key West Select Blend until the yolks and whites are completely integrated.
  2. Place your cast iron skillet over medium heat and add the olive oil, swirling to coat the bottom and the sides.
  3. Add the diced peppers and sliced onions to the pan, cooking them until they are soft and have picked up a bit of color.
  4. Sprinkle the remaining tablespoon of Salted Perfection Key West Select Blend over the vegetables and stir once.
  5. Pour the egg mixture into the skillet, making sure it settles evenly around the vegetables.
  6. Scatter the feta cheese across the top; the eggs will act as the binder as they cook through.
  7. Lower the heat to medium-low and let the eggs set until the edges are firm and the bottom is golden, about 5 minutes.
  8. Finish the dish by placing the skillet under a broiler for 2 minutes to puff the top and lightly brown the cheese.
  9. Slide the bake out of the pan, cut it into wedges, and serve it up. DUNZO!

Tony’s Fine Print

They tell me every recipe needs a little fine print, so here’s mine. I do my best to keep things straight, no surprises and no sneaky allergens. The info you see here is put together with care, capisce? But kitchens are wild places and ingredients do not always behave. Always double-check the labels on what you buy, especially if you have allergies or dietary restrictions. If something does not look right, trust your gut (and your doctor) before you trust me. Bottom line: I am here to guide, not to diagnose. You cook, you taste, you take responsibility.

Deal? Good. Now let’s eat.

Delicious! I was looking for a different way to make eggs and Chef Tony came through!!! I didn’t have any cheese so I put cilantro on top, and the broiling was necessary to cook the top of the eggs. Dunzo!

Becky, love how you made it your own with cilantro and nailed the broiling step! That’s the spirit—making the recipe work for you. Keep rocking those eggs!

I added ground pork to this recipe and that was great too!
