Ingredients
- 2 lbs Large shrimp, peeled and deveined
- 3 tbsp Salted Perfection Key West Select Blend
- 1 cup Panko breadcrumbs
- 1/2 cup Unsweetened shredded coconut
- 2 Large eggs, beaten
- 1/2 cup All-purpose flour
- Cooking spray (avocado or olive oil)
Instructions
- Pat the shrimp completely dry with paper towels to ensure the coating sticks perfectly to the surface.
- Set up your dredging station with three shallow bowls: one with the flour, one with the beaten eggs, and one with a mixture of the panko, shredded coconut, and the Salted Perfection Key West Select Blend.
- Dredge each shrimp in the flour, shaking off the excess, then dip into the egg, and finally press firmly into the coconut and panko mixture until well-coated.
- Preheat your air fryer to 375°F for about 3 minutes to ensure a hot start.
- Lightly spray the air fryer basket with oil and arrange the shrimp in a single layer, making sure they are not touching so the hot air can circulate around each bite.
- Air fry for 6 to 8 minutes, flipping the shrimp halfway through, until the coconut coating is a beautiful golden brown and the shrimp are opaque and tender.
- Transfer the hot shrimp to a serving platter and serve immediately while the crust is at its peak crunch. DUNZO!
