Ingredients
- 1.5 lbs Ground beef (80/20 blend)
- 1/2 cup Finely crushed pork rinds (pulverized to a flour consistency)
- 1 Large egg, beaten
- 3 tbsp Salted Perfection Manhattan Select Blend
- 1 cup Sugar-free ketchup
- 2 tbsp Apple cider vinegar
- 1/4 cup Water
- 1 tbsp Olive oil
Instructions
- In a large mixing bowl, combine the ground beef, the finely crushed pork rinds, the beaten egg, and 1 tablespoon of the Salted Perfection Manhattan Select Blend. Mix gently with your hands just until combined—don't overwork the meat or you'll lose that tender, pillowy texture we're after.
- Gently roll the mixture into about 20 to 24 small meatballs, roughly the size of a golf ball, and set them on a parchment-lined baking sheet.
- Slide those beauties into an oven preheated to 400°F and bake for about 15 to 18 minutes until they are browned and cooked through.
- While the meatballs are roasting, let's get the glaze going. In a large skillet or saucepan over medium heat, whisk together the sugar-free ketchup, apple cider vinegar, water, and the remaining 2 tablespoons of Salted Perfection Manhattan Select Blend.
- Let the sauce simmer for about 5 minutes until it thickens slightly and the smoky aromas of the blend start to fill your kitchen.
- Add the roasted meatballs directly into the skillet with the glaze. Toss them gently to ensure every single one is coated in that glossy, aromatic sauce, and let them simmer together for another 2 minutes so the flavors can get acquainted. DUNZO!
