Ingredients
- 1 lb Large shrimp, peeled and deveined
- 2 tbsp Unsalted butter
- 1 tbsp Olive oil
- 4 cloves Garlic, minced
- 1/3 cup Sun-dried tomatoes (packed in oil), drained and chopped
- 1 cup Heavy whipping cream
- 1/2 cup Parmesan cheese, grated
- 1/4 cup Fresh basil, chopped
- 1/2 tsp Black pepper (for cooking)
- 1/4 tsp Kosher salt (for cooking)
- 2 cups Fresh spinach (optional, for extra greens)
- 1-2 tsp Salted Perfection Tuscan Red Blend Garnishing Salt, for finishing
Instructions
- Grab a large skillet and heat the olive oil over medium-high heat. Toss in the shrimp and season lightly with the generic kosher salt and pepper. Cook for about 2-3 minutes per side until pink and opaque. Don't overcook 'em or they turn into rubber tires. Remove shrimp and set aside.
- In the same pan, melt the butter. Throw in the garlic and sun-dried tomatoes. Sauté for 1 minute until fragrant—don't burn the garlic, or I'll come over there myself.
- Lower the heat to medium. Pour in the heavy cream and let it simmer gently. Stir in the parmesan cheese until it melts and the sauce thickens up nice and smooth.
- If using spinach, toss it in now and let it wilt. Stir in the fresh basil.
- Return the shrimp to the pan and toss to coat them in that liquid gold. Warm them through for just a minute.
- Plate the shrimp immediately. Now, here is the most important part: Take your Salted Perfection Tuscan Red Blend Garnishing Salt and sprinkle it gently over the top. These are diamonds—do NOT stir them in, or they melt and you lose the crunch. Capisce?
