Ingredients

  • 1 tablespoon olive oil
  • 9 ounces fully cooked smoked chicken sausage, labeled gluten-free, sliced into 1/2-inch rounds
  • 1/2 cup frozen diced onion
  • 1 cup long-grain white rice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 2 cups reduced-sodium chicken broth, labeled gluten-free
  • 5 ounces baby spinach
  • 1/2 teaspoon Salted Perfection LEMON ZEST as an optional upgrade, or 1/4 teaspoon kosher salt plus 1/2 teaspoon finely grated fresh lemon zest

Step by step

  1. Warm the olive oil in a medium saucepan or deep skillet with a lid over medium heat. Add the sausage and cook for 3 to 4 minutes, stirring occasionally, until the edges take on a little color—the smell should recall those quick suppers that somehow brought everybody into the kitchen.
  2. Stir in the frozen onion and cook for 2 minutes. Add the rice, garlic powder, and smoked paprika; stir for 30 seconds so the grains are lightly coated and fragrant.
  3. Pour in the gluten-free chicken broth and scrape the bottom of the pan. Bring it to a gentle boil, then cover, reduce the heat to low, and simmer for 17 minutes without lifting the lid.
  4. Check that the rice is tender and the liquid is absorbed. Scatter the spinach over the top, cover again, and cook on low for 2 to 3 minutes, until the spinach wilts and the sausage reaches 165°F when checked in the center of a thick piece.
  5. Remove the pan from the heat and fold everything together gently. Stir in the optional Salted Perfection LEMON ZEST, or the measured kosher salt and fresh lemon zest, then let the rice stand covered for 3 minutes before serving this cozy little weeknight victory. DUNZO!
