Ingredients
- 2 lbs raw shrimp, peeled and deveined
- 1 cup fresh lime juice
- 1/2 cup fresh orange juice
- 1 cup diced cucumber
- 1 cup diced red bell pepper
- 1/2 cup finely chopped red onion
- 1 jalapeño, seeded and minced
- 1/2 cup chopped fresh cilantro
- 8 small wonton wrappers or mini taco shells
- 1 tsp Salted Perfection Key West Select Blend
- 1 avocado, diced
- Optional: lime wedges for serving
Instructions
- Bring a pot of water to a boil. Add shrimp and cook just until pink and opaque, about 2 minutes. Drain and immediately plunge into an ice bath to stop cooking. Drain again and chop into bite-sized pieces.
- In a large glass or ceramic bowl, combine lime juice, orange juice, diced cucumber, red bell pepper, red onion, jalapeño, and Salted Perfection Key West Select Blend. Stir to mix well.
- Add chopped shrimp and cilantro to the bowl. Toss gently to coat all the ingredients evenly. Cover and refrigerate for at least 1 hour to let flavors marry and shrimp marinate in the citrus.
- While ceviche chills, preheat oven to 350°F. Arrange wonton wrappers on a baking sheet and lightly spray or brush with oil. Bake for 5-7 minutes until crisp but not browned. Let cool.
- Spoon chilled shrimp ceviche into each crispy wonton cup. Top with diced avocado and a little extra cilantro if you’re feeling fancy.
- Serve immediately with lime wedges on the side for an extra zing. Remember, freshness is king—don’t let these sit around or they lose their mojo.
