Ingredients

  • 2 lbs raw shrimp, peeled and deveined
  • 1 cup fresh lime juice
  • 1/2 cup fresh orange juice
  • 1 cup diced cucumber
  • 1 cup diced red bell pepper
  • 1/2 cup finely chopped red onion
  • 1 jalapeño, seeded and minced
  • 1/2 cup chopped fresh cilantro
  • 8 small wonton wrappers or mini taco shells
  • 1 tsp Salted Perfection Key West Select Blend
  • 1 avocado, diced
  • Optional: lime wedges for serving

Instructions

  1. Bring a pot of water to a boil. Add shrimp and cook just until pink and opaque, about 2 minutes. Drain and immediately plunge into an ice bath to stop cooking. Drain again and chop into bite-sized pieces.
  2. In a large glass or ceramic bowl, combine lime juice, orange juice, diced cucumber, red bell pepper, red onion, jalapeño, and Salted Perfection Key West Select Blend. Stir to mix well.
  3. Add chopped shrimp and cilantro to the bowl. Toss gently to coat all the ingredients evenly. Cover and refrigerate for at least 1 hour to let flavors marry and shrimp marinate in the citrus.
  4. While ceviche chills, preheat oven to 350°F. Arrange wonton wrappers on a baking sheet and lightly spray or brush with oil. Bake for 5-7 minutes until crisp but not browned. Let cool.
  5. Spoon chilled shrimp ceviche into each crispy wonton cup. Top with diced avocado and a little extra cilantro if you’re feeling fancy.
