- 4 (6-ounce) sablefish fillets, skin-on
- 2 tbsp neutral oil (avocado or grapeseed)
- 2 tbsp Salted Perfection Sweet Ginger Finishing Salt
- 3 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp fresh ginger, finely grated
- 2 cloves garlic, minced
- 2 scallions, thinly sliced on a bias

Step by step
- Pat those fillets bone-dry with paper towels! Moisture is the enemy of the crunch! Get them dry!
- Heat your heavy skillet over medium-high heat until it's shimmering! Add the oil!
- Lay the fish in the pan skin-side down! Use a spatula to press them flat for 30 seconds! No curling allowed!
- Sear undisturbed for 5 minutes! We want that skin shatter-crisp and golden!
- Carefully flip the fillets! Lower the heat to medium!
- Toss in the ginger and garlic! Let them sizzle for 30 seconds until the aroma hits the ceiling!
- Pour in the soy sauce and mirin! Spoon that bubbling glaze over the fish for 2 more minutes!
- Remove from heat immediately! Sprinkle that Salted Perfection Sweet Ginger Finishing Salt over every fillet for a massive flavor pop!
- Garnish with scallions and serve it while it's hot! You crushed this! DUNZO!
