Ingredients

  • 1.5 lbs large sea scallops, dry-packed

  • 1 fresh rosemary sprig
  • 1/2 lemon, juiced
  • 1 Granny Smith apple, julienned into thin matchsticks
  • Freshly cracked black pepper to taste

Instructions

  1. Begin by patting the scallops bone-dry with paper towels. This is the most important step for a world-class sear. Remove the small, tough adductor muscle from the side of each scallop if it is still attached.
  2. Season the scallops lightly on both sides with 1 tablespoon of the Salted Perfection Simply Rosemary Finishing Salt and a touch of black pepper.
  3. Heat a large stainless steel or cast-iron skillet over high heat until it is just starting to smoke. Add the oil and swirl to coat the pan.
  4. Carefully place the scallops in the pan, making sure they do not touch. Sear them undisturbed for about 2 minutes, or until a deep, golden-brown crust has formed on the bottom.
  5. Flip the scallops gently. Immediately add the butter and the fresh rosemary sprig to the pan. As the butter melts and begins to foam and turn brown, use a large spoon to continuously baste the scallops with the aromatic fat for another 1 to 2 minutes.
  6. Remove the pan from the heat. Squeeze the lemon juice over the scallops and toss in the julienned apples just to warm them through for thirty seconds.
  7. Transfer the scallops and apples to a warm platter, drizzling the remaining brown butter from the pan over the top.
