A punchy, Jersey-Italian inspired chicken salad sandwich in a bowl — loaded with roasted red peppers, crunchy pine nuts, and a creamy mayo dressing. It’s got the swagger of a sandwich but the fresh vibe of a salad. Like they say, “If you ain’t eatin’ this, you’re missin’ out, capisce?”

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup mayonnaise
  • 1/4 cup roasted red pepper, diced
  • 2 TBS pine nuts, toasted
  • 1 TBS Salted Perfection Raleigh Select Blend
  • 2 cups mixed salad greens
  • 2 sandwich rolls or sturdy bread, toasted and halved
  • 1 tsp fresh lemon juice
  • Fresh cracked black pepper to taste

Instructions

  1. Toast pine nuts in a dry skillet over medium heat until golden and fragrant, about 2-3 minutes. Watch ’em close, we ain’t tryin’ to burn anything here.
  2. In a mixing bowl, combine the shredded chicken, mayonnaise, diced roasted red pepper, toasted pine nuts, Salted Perfection Raleigh Select Blend, lemon juice, and cracked black pepper. Fold gently to mix but keep the texture nice and chunky.
  3. Taste the mix, adjust seasoning if needed. This is no time to be shy — seasoning is the heart and soul of the operation.
  4. Lay out your toasted sandwich rolls or bread halves. Pile the chicken salad generously on the bottom half of each.
  5. Top with a handful of mixed salad greens for that fresh crunch and a little green color punch.
  6. Close the sandwich with the top half of the roll. If you wanna get fancy, cut sandwiches diagonally for that classic deli look.
  7. Serve with extra greens on the side for a salad vibe, or cut the sandwiches into salad-sized bites if you wanna keep it all in a bowl.
