Total time 1 hour 10 minutes
Serves 8

This is the kind of meal that does the heavy lifting for you. We are talking seasoned ground pork, tender potatoes, and eggs all coming together in one pan. It is solid, it is filling, and it is exactly what you want on the table when you have a crowd to feed. No nonsense, just good food.

Made to serve: 5-6
Scale:

Ingredients

  • 2 lbs ground pork
  • 12 large eggs
  • 1 cup whole milk
  • 3 tbsp Salted Perfection Santa Maria Select Blend
  • 32 oz frozen shredded hash browns, thawed
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 2 cups shredded sharp cheddar cheese
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F and grease a 9x13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the ground pork and cook it until it is thoroughly browned and crumbled. Drain off the excess fat.
  3. Add the diced onion and bell pepper to the skillet with the pork. Sauté them for about 5 minutes until they have softened up.
  4. Stir 1 tablespoon of the Salted Perfection Santa Maria Select Blend into the pork and vegetable mixture.
  5. In a large mixing bowl, whisk the eggs, milk, and the remaining 2 tablespoons of the Salted Perfection Santa Maria Select Blend until the mixture is smooth.
  6. Spread the thawed hash browns evenly across the bottom of your prepared baking dish.
  7. Layer the cooked pork and vegetable mixture over the potatoes, then sprinkle the shredded cheddar cheese evenly over the top.
  8. Pour the egg and milk mixture over the entire dish. Give the pan a gentle shake to ensure the liquid settles through all the layers.
  9. Bake for 40 to 45 minutes, or until the center is set and the top has turned a nice golden brown.
  10. Remove from the oven and let the casserole rest for 10 minutes to ensure clean slices. DUNZO!

Tony’s Fine Print

They tell me every recipe needs a little fine print, so here’s mine. I do my best to keep things straight, no surprises and no sneaky allergens. The info you see here is put together with care, capisce? But kitchens are wild places and ingredients do not always behave. Always double-check the labels on what you buy, especially if you have allergies or dietary restrictions. If something does not look right, trust your gut (and your doctor) before you trust me. Bottom line: I am here to guide, not to diagnose. You cook, you taste, you take responsibility.

Deal? Good. Now let’s eat.
