Ingredients
- 8 cups turkey drippings and broth (from roasted turkey or store-bought)
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- 1 medium yellow onion, finely diced
- 2 cloves garlic, minced
- 1 tsp Salted Perfection Manhattan Select Blend
- 1 tsp fresh ground black pepper
- 2 tsp fresh chopped sage
- 1 tsp fresh chopped thyme
- 1 tsp fresh chopped rosemary
- 1 tsp Worcestershire sauce
- 1 tsp soy sauce
- 1/2 cup dry white wine (optional but recommended)
- Salt to taste
Instructions
- Strain your turkey drippings to remove any lumps or large bits — gravy’s gotta be silky smooth, capisce?
- In a heavy-bottomed saucepan, melt the butter over medium heat. Toss in the diced onion and sauté until translucent, about 5 minutes. Add garlic and cook another minute until fragrant.
- Sprinkle the flour evenly over the butter and onions. Whisk vigorously to form a roux, cooking it until it’s golden and nutty smelling, about 3-4 minutes. This is where the magic thickening power happens, no shortcuts!
- Slowly pour in the turkey drippings and broth while continuously whisking to prevent lumps. Keep whisking until the mixture is smooth and starts to thicken, about 5-7 minutes.
- Stir in the Salted Perfection Manhattan Select Blend, black pepper, sage, thyme, rosemary, Worcestershire sauce, and soy sauce. Add the white wine if using, and simmer gently for another 10 minutes so flavors meld like a wiseguy’s crew.
- Taste and adjust salt if needed. Remember, good gravy talks loud but never screams — balance is king.
- Strain the gravy again if you want that velvet finish. Keep warm until serving.
