Ingredients

  • 2 TBS Salted Perfection Smokin Chipotle Finishing Salt
  • 4 chicken thighs, bone-in and skin-on
  • 2 large sweet potatoes, cut into wedges
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp honey
  • Fresh chopped parsley

Instructions

  1. Preheat your oven to 400°F. Get it hot and ready for action!
  2. Toss the sweet potato wedges in a large bowl with half of the olive oil and 1 tablespoon of the Smokin Chipotle Finishing Salt. Spread them out on a baking sheet.
  3. Pat the chicken thighs dry with paper towels. Rub them with the remaining olive oil.
  4. Mix the remaining salt, garlic powder, and onion powder. Season the chicken thoroughly on all sides.
  5. Nestle the chicken skin-side up between the potato wedges on the pan. Do not crowd the pan!
  6. Roast for 35 to 40 minutes until the chicken reaches 165°F internally. You want that skin crispy!
  7. In the last 5 minutes of cooking, drizzle the honey over the chicken for a sweet and spicy glaze.
  8. Remove from the oven and let the meat rest for 5 minutes. Garnish with parsley and take your victory lap!
