Get ready for a knockout round of dim sum with these plump shrimp & crab dumplings kissed by fresh cilantro and a splash of East-meets-Jersey flavor. Soft, steamed perfection that’ll have you sayin' mamma mia, but make it Asian!

Ingredients

  • 12 oz peeled and deveined shrimp, finely chopped
  • 8 oz fresh crab meat, picked over for shells
  • 1/2 cup fresh cilantro, finely chopped
  • 2 scallions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 TBS soy sauce
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • 1 tsp Salted Perfection Raleigh Select Blend
  • 1 package round dumpling wrappers (about 30 wrappers)
  • 1 cup water (for sealing wrappers)
  • Sesame oil, for brushing

Instructions

  1. In a large bowl, mix shrimp, crab meat, cilantro, scallions, garlic, ginger, soy sauce, sesame oil, cornstarch, and Salted Perfection Raleigh Select Blend. Combine gently but thoroughly; we want all the flavors singing like a choir in a deli on Sunday.
  2. Lay a dumpling wrapper flat on your palm. Place about 1 heaping tsp of filling in the center. Dip your finger in water and moisten the edges of the wrapper to help it seal tight.
  3. Fold the wrapper in half over the filling to create a half-moon shape. Pinch the edges together to seal, creating small pleats if you’re feeling fancy. Keep going until all filling is used.
  4. Line a bamboo steamer or a large heatproof plate with parchment paper or cabbage leaves (prevents sticking). Arrange dumplings evenly, not touching.
  5. Set up a wok or large pot with a steaming rack and bring water to a boil. Place the steamer on top, cover, and steam dumplings for 8-10 minutes until translucent and cooked through — shrimp should be firm and crab sweet.
  6. Remove carefully, brush tops lightly with sesame oil to keep ’em shiny and delicious.
  7. Serve hot with your favorite dipping sauce — soy, chili oil, or straight-up vinegar. Remember, it’s all about that balance, just like a perfect Negroni.
