  • 1 Large white onion, halved
  • 6 Cloves garlic, peeled
  • 1 tsp Dried Mexican oregano
  • 1 Cinnamon stick
  • 2 Bay leaves
  • 1/4 cup Apple cider vinegar
  • 3 cups Low-sodium beef broth
  • 24 Corn tortillas
  • 1.5 lbs Oaxaca cheese (or low-moisture mozzarella), shredded
  • 1 cup White onion, finely diced (for garnish)
  • 1 cup Fresh cilantro, chopped
  • Lime wedges

Instructions

  1. Hydrate the Chiles: Toast the dried guajillo and ancho chiles in a dry skillet over medium heat for 1-2 minutes until fragrant, then submerge in very hot water for 15 minutes. *Why?* This softens the pectin in the cell walls, ensuring a smooth sauce, while heat wakes up the dormant essential oils.
  2. The Maillard Reaction: Rub the beef chunks with 2 tbsp of Salted Perfection Raleigh Select Blend. Sear them aggressively in a hot skillet until browned on all sides, then transfer to the slow cooker. We are creating complex flavor molecules here that wet cooking cannot achieve.
