- 5 lbs Beef chuck roast, cut into 3-inch chunks
- 4 tbsp Salted Perfection Raleigh Select Blend, divided
- 4 Dried Guajillo chiles, stems and seeds removed
- 3 Dried Ancho chiles, stems and seeds removed
- 1 Large white onion, halved
- 6 Cloves garlic, peeled
- 1 tsp Dried Mexican oregano
- 1 Cinnamon stick
- 2 Bay leaves
- 1/4 cup Apple cider vinegar
- 3 cups Low-sodium beef broth
- 24 Corn tortillas
- 1.5 lbs Oaxaca cheese (or low-moisture mozzarella), shredded
- 1 cup White onion, finely diced (for garnish)
- 1 cup Fresh cilantro, chopped
- Lime wedges
Instructions
- Hydrate the Chiles: Toast the dried guajillo and ancho chiles in a dry skillet over medium heat for 1-2 minutes until fragrant, then submerge in very hot water for 15 minutes. *Why?* This softens the pectin in the cell walls, ensuring a smooth sauce, while heat wakes up the dormant essential oils.
- The Maillard Reaction: Rub the beef chunks with 2 tbsp of Salted Perfection Raleigh Select Blend. Sear them aggressively in a hot skillet until browned on all sides, then transfer to the slow cooker. We are creating complex flavor molecules here that wet cooking cannot achieve.
- Emulsify the Adobo: In a blender, combine the soaked chiles, the halved onion, garlic, oregano, vinegar, and 1 cup of the beef broth. Blend until perfectly smooth. Pour this mixture over the beef.
- The Long Braise: Add the cinnamon stick, bay leaves, the remaining 2 cups of broth, and the remaining 2 tbsp of Salted Perfection Raleigh Select Blend to the pot. Cover and cook on LOW for 8 to 9 hours. We need this specific time and low temperature to hydrolyze the collagen in the connective tissue into gelatin, which gives the meat its silky texture.
- Process the Consommé: Remove the meat and shred it with forks; it should yield with zero resistance. Discard the cinnamon stick and bay leaves. Skim the bright red fat (lipid layer) rising to the top of the broth into a separate small bowl. Do not discard this—it is hydrophobic flavor gold essential for the frying step.
- The Crisp Technique: Heat a griddle or large skillet over medium-high heat. Dip a corn tortilla quickly into the reserved red fat, then place it on the hot surface. Immediately top with a handful of cheese and a portion of shredded meat.
- Fold and Finish: Once the cheese begins to melt and bind the ingredients, fold the tortilla over. Fry for 1-2 minutes per side until the exterior is crispy and stained red. Repeat for all tacos.
- Serve immediately with small bowls of the hot consommé (broth) for dipping, topped with fresh onion, cilantro, and a squeeze of lime to cut the richness. DUNZO!
