These little beauties take me back to my early days doing demos at the local markets. I wanted something that would stop people in their tracks just by the smell. The Raleigh blend has that smoky, citrusy soul that reminds me of late August evenings on the porch, where the air is warm and the food is shared with family. It is nostalgia in a bite, crispy on the outside and tender enough to melt in your mouth.

Ingredients

  • 2.5 lbs boneless skinless chicken thighs, cut into 1-inch pieces
  • 3 tbsp Salted Perfection Raleigh Select Blend
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs
  • High-heat olive oil spray

Instructions

  1. In a large bowl, toss your chicken pieces with 2 tablespoons of the Salted Perfection Raleigh Select Blend until every piece is coated in that smoky, citrusy goodness. Let it sit for 15 minutes to let the flavors settle into the meat.
  2. Set up your breading station with three shallow bowls: one with the flour, one with the beaten eggs, and one with the panko breadcrumbs mixed with the remaining 1 tablespoon of Salted Perfection Raleigh Select Blend.
  3. Dredge each piece of chicken in the flour, shaking off the excess, then dip into the egg wash, and finally press firmly into the panko until fully crusted.
  4. Preheat your air fryer to 400°F for about 3 minutes.
  5. Place the chicken bites in the air fryer basket in a single layer, making sure they aren't crowded so the air can circulate. You will likely need to do this in two batches for 8 servings.
  6. Give the tops of the chicken a light spray with the olive oil to help that panko get golden and beautiful.
  7. Cook for 10 to 12 minutes, flipping the bites halfway through and giving them another quick spray of oil, until the internal temperature reaches 165°F and the crust is mahogany brown.
  8. Remove from the air fryer and let them rest for two minutes before serving with your favorite dipping sauce. DUNZO!
