  • 2 lbs Venison backstrap (silver skin removed)
  • 3 TBS Salted Perfection Manhattan Select Blend
  • 2 TBS Extra virgin olive oil
  • 1 tsp Dried thyme
  • 1 tsp Garlic powder

Step by step

  1. First things first: trim that silver skin off the venison. If you leave it on, it tightens up like a rubber band. We want tender, not a workout for your jaw.
  2. Rub the meat all over with the olive oil. This is our binder; it helps the flavor stick.
  3. In a small bowl, mix the Salted Perfection Manhattan Select Blend with the thyme and garlic powder. Coat the venison generously on all sides. Press it in so it stays put.
  4. Fire up your smoker to 225°F. We want gentle heat here.
  5. Place the venison directly on the grates. Smoke until the internal temperature hits 125°F for medium-rare. This should take about 60-90 minutes depending on thickness. Watch it like a hawk—venison waits for nobody.
  6. Remove from the smoker. If you want a crust, sear it in a screeching hot cast iron pan for 60 seconds per side. If not, just let it ride.
  7. Rest the meat for at least 10 minutes before slicing. This locks the juices in. Slice against the grain.
