Ingredients

  • 1 tbsp Olive oil
  • 1 small Yellow onion, roughly chopped
  • 2 cloves Garlic, smashed
  • 1 (15 oz) can Tomato sauce (ensure no added sugar label)
  • 1/2 cup Apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp Liquid smoke (optional, for that campfire vibe)
  • 2–3 tbsp Salted Perfection Manhattan Select Blend

Instructions

  1. Set your Instant Pot to Sauté mode (Normal/Medium). Let it heat up!
  2. Add the olive oil, chopped onion, and garlic. Sauté for about 3 to 4 minutes until the onions are soft and translucent. We are building a flavor foundation here!
  3. Hit Cancel to turn off the heat. Pour in the tomato sauce, apple cider vinegar, Dijon mustard, liquid smoke, and the Salted Perfection Manhattan Select Blend. Stir it well to combine everything.
  4. Lock the lid in place and set the valve to Sealing. Select Pressure Cook (or Manual) on High Pressure for 10 minutes.
  5. When the timer beeps, let the pressure release naturally for 5 minutes, then carefully flip the valve to Venting for a quick release.
  6. Open the lid. Use an immersion blender directly in the pot to blitz the sauce until it is perfectly smooth. If you do not have one, carefully transfer to a standard blender.
  7. If you want it thicker, switch back to Sauté mode (Low) and simmer for 2–3 minutes, stirring constantly so it doesn't splatter.
  8. Taste that victory! Let it cool before storing. DUNZO!
