This isn't your run-of-the-mill dressing; it's a study in balance. We’re taking the deep, woody complexity of a properly aged balsamic and brightening it with the citrus and smoke of the Raleigh blend. The way the fresh thyme oils mingle with the smoked sea salt—it’s enough to make a grown man weep. You want ingredients that speak to each other, and these are having a beautiful conversation. Every drop is about honoring the freshness of the herbs and the incredible depth of that smoked salt.

Scale:

Ingredients

  • 1/3 cup high-quality balsamic vinegar
  • 2/3 cup cold-pressed extra virgin olive oil
  • 1.5 tbsp honey
  • 1 tsp Dijon mustard
  • 1 tbsp fresh thyme leaves, stripped from the stem
  • 2 tbsp Salted Perfection Raleigh Select Blend

Instructions

  1. In a glass mixing bowl, combine the balsamic vinegar, honey, and Dijon mustard, whisking until the mixture is perfectly smooth and the honey has completely integrated.
  2. Whisk the Salted Perfection Raleigh Select Blend into the vinegar base; it is absolutely vital that the salt crystals and spices fully dissolve here before we introduce any fats.
  3. Slowly, and I mean one drop at a time to start, drizzle in the extra virgin olive oil while whisking vigorously to create a thick, stable, and glossy emulsion.
  4. Gently stir in the fresh thyme leaves, allowing the acidity of the dressing to begin drawing out their bright, herbal fragrance.
  5. Let the dressing sit for five minutes at room temperature to allow the smoked salt and citrus notes to fully bloom within the balsamic.
  6. Give the dressing one final whisk to ensure it's perfectly emulsified before drizzling it over your salad. DUNZO!

Tony’s Fine Print

They tell me every recipe needs a little fine print, so here’s mine. I do my best to keep things straight, no surprises and no sneaky allergens. The info you see here is put together with care, capisce? But kitchens are wild places and ingredients do not always behave. Always double-check the labels on what you buy, especially if you have allergies or dietary restrictions. If something does not look right, trust your gut (and your doctor) before you trust me. Bottom line: I am here to guide, not to diagnose. You cook, you taste, you take responsibility.

Deal? Good. Now let’s eat.
