- 1 lb crawfish tails, peeled and deveined (keep the fat if available)
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- 1 large yellow onion, fine dice
- 1 green bell pepper, fine dice
- 2 stalks celery, fine dice
- 4 cloves garlic, minced
- 2 TBS Salted Perfection Raleigh Select Blend
- 2 cups seafood or chicken stock, warmed
- 1 tsp Worcestershire sauce
- 1/4 cup green onions, sliced
- 2 tbsp fresh parsley, chopped
- 4 cups cooked white rice, for serving
Instructions
- First, we address the foundation. In a heavy-bottomed Dutch oven or cast iron skillet, melt the butter over medium heat. Whisk in the flour until smooth. We are looking for a chemical change here.
- Cook the roux, stirring constantly with a whisk or wooden spoon. Do not walk away. We need the starch granules to toast evenly without burning. You are aiming for a color similar to dark peanut butter or a copper penny. This usually takes 10 to 15 minutes.
- Once the roux reaches the correct pigment, immediately add the onion, bell pepper, and celery (the Holy Trinity). The water content in the vegetables will instantly drop the temperature of the roux, stopping the cooking process so it doesn't scorch. Sauté for 5 minutes until the vegetables soften.
- Stir in the minced garlic and the Salted Perfection Raleigh Select Blend. We add the spices now so the heat can bloom the essential oils in the paprika and cumin, making them more aromatic.
- Slowly pour in the warmed stock while whisking. Adding warm liquid to the hot roux prevents the lipids from seizing, ensuring a smooth, velvety emulsion rather than a lumpy mess. Bring to a simmer.
- Reduce heat to low and let it simmer for 15 minutes. This allows the starch to fully gelatinize and thicken the sauce. Stir in the Worcestershire sauce.
- Add the crawfish tails. If they are pre-cooked (common with frozen), they only need 2-3 minutes to heat through. If raw, cook for 5-7 minutes. Do not overcook, or the protein fibers will tighten up and become rubbery.
- Remove from heat. Stir in the green onions and parsley. Serve immediately over a mound of white rice to soak up that complex gravy.
