- 4 slices thick-cut bacon
- 2 large eggs
- 1 ripe avocado
- 2 TBS heavy cream
- 1 TBS butter

- Fresh cracked black pepper to taste
- 1 TBS chopped fresh chives
Instructions
- Heat a 10-inch cast iron skillet over medium heat. Lay down the bacon slices flat and cook ‘em slow till crispy, about 6-8 minutes, flipping halfway. Remove bacon and drain on paper towels but keep the fat in the pan—this is liquid gold, capisce?
- In a small bowl, mash the avocado with heavy cream, minced garlic, Salted Perfection Raleigh Select Blend, and cracked black pepper until smooth and creamy. Set aside. This sauce is straight-up money, no joke.
- Turn the heat down to medium-low. Add butter to the bacon fat in the skillet. Crack the eggs gently into the pan, sprinkle with smoked paprika, and cook sunny-side up until the whites are just set but yolks still runny, about 3-4 minutes.
