Ingredients

  • 4 large scrambled eggs
  • 4 slices thick-cut bacon
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup diced green bell pepper
  • 2 green onions, sliced

  • 1 tbsp butter
  • Fresh cracked black pepper to taste

Instructions

  1. Heat a 10-inch cast iron skillet over medium heat. Lay bacon slices in the pan and cook until crispy, about 6-8 minutes, flipping halfway. Remove bacon and set on paper towels to drain, leaving bacon fat in the skillet.
  2. Reduce heat to medium-low. Add butter to the bacon fat and let it melt, coating the pan. Toss in diced green bell pepper and green onions; sauté for 2-3 minutes until softened and fragrant.
  3. Pour in scrambled eggs and gently fold them into the veggies. Cook low and slow, stirring occasionally, until eggs are just set but still creamy—don’t rush it, capisce?
  4. Crumble the crispy bacon into the skillet, sprinkle shredded cheddar over the top, and cover the pan with a lid or foil for 1-2 minutes to melt the cheese perfectly.
