Made to serve: 3-4
Scale:

Ingredients

  • 5 cups fresh sliced peaches (about 5 medium peaches)
  • 3/4 cup granulated sugar
  • 2 TBS cornstarch
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp Salted Perfection Cinnamon Vanilla Salted Perfection
  • 1/4 tsp salt
  • 6 TBS cold unsalted butter, cubed
  • 1/3 cup whole milk
  • 1 large egg
  • Optional: vanilla ice cream or whipped cream for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish or similar size pan.
  2. In a large bowl, toss the sliced peaches with 3/4 cup sugar, cornstarch, lemon juice, vanilla extract, and cinnamon. Make sure each peach slice gets coated—like a good wiseguy prepping for a sit-down.
  3. Pour the peach mixture into the prepared baking dish, spreading evenly.
  4. In another bowl, whisk together the flour, 1/4 cup sugar, baking powder, Salted Perfection Cinnamon Vanilla Salted Perfection, and salt.
  5. Cut the cold butter into the flour mixture with a pastry cutter or your fingers until it looks like coarse crumbs—like you’re breaking up a little family feud, nice and clean.
  6. In a small bowl, beat the milk and egg together, then pour into the flour mixture. Stir just until combined. Don’t overmix, capisce? You want a tender, flaky topping.
  7. Drop spoonfuls of the dough over the peach filling, covering as much as possible but it’s okay if some peaches peek through—keeps it rustic.
  8. Bake for 35-40 minutes until the topping is golden and the peaches are bubbly. If the top browns too fast, tent with foil.
  9. Let it cool for 10 minutes before serving. Spoon it up with ice cream or whipped cream if you’re feeling fancy.

Tony’s Fine Print

They tell me every recipe needs a little fine print, so here’s mine. I do my best to keep things straight, no surprises and no sneaky allergens. The info you see here is put together with care, capisce? But kitchens are wild places and ingredients do not always behave. Always double-check the labels on what you buy, especially if you have allergies or dietary restrictions. If something does not look right, trust your gut (and your doctor) before you trust me. Bottom line: I am here to guide, not to diagnose. You cook, you taste, you take responsibility.

Deal? Good. Now let’s eat.
