Ingredients
- 2 lbs bone-in, skin-on chicken thighs
- 2 large sweet potatoes, peeled and cubed
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 tbsp grated fresh ginger
- 1 can (14 oz) diced tomatoes
- 2 cups chicken broth
- 1 tbsp tomato paste
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper
- Salt and black pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish

Instructions
- Preheat oven to 375°F (190°C). Grab a large ovenproof Dutch oven or heavy skillet with lid.
- Season chicken thighs generously with black pepper and Salted Perfection's Lemon Zest & Sea Salt. Heat olive oil over medium-high heat and sear chicken skin-side down until golden brown, about 5 minutes per side. Remove and set aside—don’t you dare crowd the pan or steam the meat!
- Lower heat to medium, toss in onions, garlic, and ginger. Sweat until fragrant and translucent, about 4 minutes. That’s your flavor foundation, capisce?
- Stir in smoked paprika, cumin, coriander, cinnamon, cayenne, and tomato paste. Cook spices for 1-2 minutes to toast ‘em up—flavor wake-up call!
- Add diced tomatoes and chicken broth, scraping up all those browned bits. Bring to a simmer.
- Toss sweet potatoes in the pot, nestle the chicken back in skin-side up, cover with the lid.
- Slide the pot into the oven and bake for 35-40 minutes until chicken is cooked through and sweet potatoes are tender. No peeking! Let the heat do its thing.
- Remove from oven, garnish with fresh cilantro, and serve hot with crusty bread or rice. Boom—flavor city, kid!
