Ingredients

  • 2 lbs bone-in, skin-on chicken thighs
  • 2 large sweet potatoes, peeled and cubed
  • 1 large onion, diced
  • 3 cloves garlic, minced

  • 2 cups chicken broth

Instructions

  1. Preheat oven to 375°F (190°C). Grab a large ovenproof Dutch oven or heavy skillet with lid.
  2. Season chicken thighs generously with black pepper and Salted Perfection's Lemon Zest & Sea Salt. Heat olive oil over medium-high heat and sear chicken skin-side down until golden brown, about 5 minutes per side. Remove and set aside—don’t you dare crowd the pan or steam the meat!
  3. Lower heat to medium, toss in onions, garlic, and ginger. Sweat until fragrant and translucent, about 4 minutes. That’s your flavor foundation, capisce?
  4. Stir in smoked paprika, cumin, coriander, cinnamon, cayenne, and tomato paste. Cook spices for 1-2 minutes to toast ‘em up—flavor wake-up call!
