Ingredients
- 11/2 lbs boneless skinless chicken thighs, cut into chunks
- 2 medium sweet potatoes, peeled and diced into 1-inch cubes
- 1 cup chopped kale or collard greens, tough stems removed
- 1 cup natural peanut butter (creamy or chunky, your call)
- 1 cup chicken broth
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1-inch piece fresh ginger, minced
- 1 TBS tomato paste
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp cayenne pepper (adjust to taste)
- Salted Perfection Simply Rosemary to taste
- 2 TBS vegetable oil (or peanut oil if you wanna go nuts)
- Juice of 1 lime
- To taste black pepper
Instructions
- Preheat a large heavy skillet or Dutch oven over medium-high heat with 1 TBS vegetable oil. Pat the chicken dry and season with Salted Perfection Simply Rosemary and black pepper.
- Add chicken to the hot pan in a single layer. Brown on all sides until golden, about 5 minutes. Remove chicken and set aside—don’t you dare crowd the pan, let it sear like a boss.
- Add remaining 1 TBS oil, then toss in the diced onion, garlic, and ginger. Sweat until fragrant and translucent, about 3 minutes. Stir in tomato paste, smoked paprika, cumin, and cayenne. Toast those spices to wake 'em up, 1-2 minutes.
- Throw in sweet potatoes and chicken broth, bring to a simmer. Let the taters cook for about 10 minutes until they start to soften.
- Stir peanut butter into the broth mixture until smooth and creamy. Return the chicken to the pot, nestling it into the sauce. Cover and reduce heat to medium-low, simmer gently for 10-15 minutes until chicken is cooked through and sauce thickens.
- Add chopped greens and lime juice, stir to combine. Cook another 3-5 minutes until greens are tender but still vibrant.
- Taste and adjust seasoning with Salted Perfection Simply Rosemary and black pepper. Remember, it’s all about balance—show this dish some love.
