Made to serve: 3-4
Scale:
Ingredients
- 1 lb boneless skinless chicken thighs, diced
- 2 TBS vegetable oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 TBS garam masala
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric powder
- 1/2 tsp chili powder
- 1 tsp Salted Perfection Raleigh Select Blend
- 1/2 cup plain yogurt
- 1 TBS tamarind paste
- 1 TBS honey
- 1 lime, juiced
- 8 small corn tortillas
- 1/2 cup fresh cilantro, chopped
- 1 small red onion, thinly sliced
- 1 fresh green chili, thinly sliced (optional for heat)
- 1/2 cup cucumber, diced (for topping)
- 1/2 cup tomato, diced (for topping)
Instructions
- Marinate the diced chicken thighs with 1/2 tsp Salted Perfection Raleigh Select Blend, garam masala, cumin, coriander, turmeric, chili powder, garlic, and ginger. Let it sit for at least 20 minutes to soak up the flavor — like a wiseguy marinating in respect.
- Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add chopped onions and sauté until translucent and soft, about 5 minutes. This is where the base flavor builds, so don’t rush it, capisce?
- Toss in the marinated chicken and sear until browned on all sides and cooked through, about 8-10 minutes. Stir often to keep it juicy and prevent sticking.
- In a small bowl, mix tamarind paste, honey, and lime juice to create a tangy sauce. Add this to the cooked chicken, stirring well to coat. Let it simmer on low for 3 minutes so those flavors marry like a perfect family dinner.
- Warm the corn tortillas in a dry skillet or oven at 350°F for about 3-4 minutes until pliable and fragrant.
- Assemble your tacos: spoon the spiced chicken mixture onto each tortilla. Top with a dollop of plain yogurt, fresh cilantro, sliced red onion, cucumber, tomato, and sliced green chili if you want some fire.
- Sprinkle the remaining 1/2 tsp Salted Perfection Raleigh Select Blend lightly over the tacos for that final punch of savory goodness.
- Serve immediately and enjoy that flavor explosion. Remember, good food’s like good talk—it’s gotta have some bite and a little soul.
