Made to serve: 1-2
Scale:
Ingredients
- 1-2 tsp Salted Perfection Tuscan Red Blend Garnishing Salt, for finishing
- 1 lb Large shrimp, peeled and deveined
- 2 tbsp Unsalted butter
- 1 tbsp Olive oil
- 3 cloves Garlic, minced
- 1/3 cup Sun-dried tomatoes, chopped (oil-packed preferred)
- 1/2 cup Heavy cream
- 1/4 cup Grated Parmesan cheese
- 2 cups Fresh baby spinach
- Kosher salt and black pepper, to taste (for cooking only)
Instructions
- Grab a large skillet and heat the butter and olive oil over medium-high heat. Toss in the shrimp. Cook 'em for about 2 minutes per side until pink. Do not overcook them, or they turn into rubber tires. Remove shrimp and set aside.
- In the same pan (keep that flavor!), toss in the minced garlic and sun-dried tomatoes. Sauté for about 1 minute until the garlic is singing.
- Lower the heat to medium-low. Pour in the heavy cream and bring to a gentle simmer. Whisk in the parmesan cheese until the sauce is smooth and creamy. Season the SAUCE with a pinch of regular kosher salt and pepper here if needed.
- Add the spinach to the pan and stir until it wilts down nicely. Toss the shrimp back in and coat them in the sauce just to warm them through.
- Plate the shrimp and sauce immediately. Don't let it sit.
- FINAL STEP (CRITICAL): Take your Salted Perfection Tuscan Red Blend Garnishing Salt and sprinkle it gently over the top of the finished dish. Do NOT cook with this salt, capisce? It's a diamond—it melts if you heat it. Just a dust at the end for that citrus-wine crunch.
