Listen to me, we're taking those shrimp and sun-dried tomatoes and giving 'em the royal Jersey treatment. This is a rich, creamy, garlic-heavy masterpiece that keeps it Keto so you still fit in your suit. Bada bing, bada boom—dinner is served.

Ingredients

  • 1-2 tsp Salted Perfection Tuscan Red Blend Garnishing Salt, for finishing
  • 1 lb Large shrimp, peeled and deveined
  • 2 tbsp Unsalted butter
  • 1 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1/3 cup Sun-dried tomatoes, chopped (oil-packed preferred)
  • 1/2 cup Heavy cream
  • 1/4 cup Grated Parmesan cheese
  • 2 cups Fresh baby spinach
  • Kosher salt and black pepper, to taste (for cooking only)

Instructions

  1. Grab a large skillet and heat the butter and olive oil over medium-high heat. Toss in the shrimp. Cook 'em for about 2 minutes per side until pink. Do not overcook them, or they turn into rubber tires. Remove shrimp and set aside.
  2. In the same pan (keep that flavor!), toss in the minced garlic and sun-dried tomatoes. Sauté for about 1 minute until the garlic is singing.
  3. Lower the heat to medium-low. Pour in the heavy cream and bring to a gentle simmer. Whisk in the parmesan cheese until the sauce is smooth and creamy. Season the SAUCE with a pinch of regular kosher salt and pepper here if needed.
  4. Add the spinach to the pan and stir until it wilts down nicely. Toss the shrimp back in and coat them in the sauce just to warm them through.
  5. Plate the shrimp and sauce immediately. Don't let it sit.
