  • 6 cups Keto-friendly bread, cut into 1-inch cubes
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup canned full-fat coconut cream
  • 3/4 cup granulated monkfruit sweetener
  • 1.5 tsp pineapple extract
  • 1/2 cup unsweetened shredded coconut
  • 2 tbsp Salted Perfection French Vanilla Finishing Salt

Step by step

  1. Preheat your oven to 350°F. You are ready for greatness!
  2. In a large bowl, whisk the eggs, heavy cream, coconut cream, monkfruit sweetener, and pineapple extract until smooth.
  3. Whisk in 1.5 tablespoons of the Salted Perfection French Vanilla Finishing Salt. This is where the magic happens!
  4. Fold in the keto bread cubes and the shredded coconut. Make sure every piece is submerged!
  5. Let the mixture sit for 15 minutes. This allows the bread to soak up all that tropical goodness!
