Ingredients

  • 8 cups cubed brioche bread
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 cup heavy cream
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 cup diced fresh pineapple
  • 1/2 cup sweetened shredded coconut
  • 1 tsp vanilla extract
  • 1 tbsp dark rum
  • 2 tbsp Salted Perfection French Vanilla Finishing Salt

Instructions

  1. Preheat your oven to 350°F. Grease a 9x9 inch baking dish.
  2. Whisk the coconut milk, heavy cream, eggs, sugar, vanilla, and rum in a large bowl. Get it smooth!
  3. Stir in 1 tablespoon of the Salted Perfection French Vanilla Finishing Salt.
  4. Fold in the bread cubes, diced pineapple, and half of the shredded coconut.
  5. Let that bread soak for 20 minutes. It needs to absorb all that glory!
  6. Pour the mixture into your prepared dish. Press it down gently.
  7. Bake for 45 to 50 minutes. You want it golden and set!
  8. Remove from the oven. Sprinkle the remaining shredded coconut and the rest of the Salted Perfection French Vanilla Finishing Salt over the top. DUNZO!
