This is the ultimate refresher when the sun is beating down. We are talking pure watermelon flavor, kicked up with a bit of lime and a salt that makes the fruit pop like a neon sign. No ice cream maker needed here, just a good blender and some patience while the fruit freezes.

Ingredients

  • 6 cups watermelon, cubed and frozen solid
  • 1/2 cup simple syrup
  • 3 tbsp lime juice
  • 2 tbsp Salted Perfection Lime Zest Finishing Salt

Instructions

  1. Spread your watermelon cubes on a baking sheet and freeze them until they are rock solid, usually about 4 hours.
  2. Place the frozen watermelon cubes into a high-powered blender.
  3. Add the simple syrup and the lime juice to the blender.
  4. Add the Salted Perfection Lime Zest Finishing Salt. This salt is the secret to pulling the sweetness out of the melon and keeping the texture smooth.
  5. Pulse the mixture on high until it is completely smooth. If the blender struggles, let it sit for two minutes to soften slightly and try again.
  6. You can serve this immediately as a soft-serve style dessert, or transfer it to a chilled container and freeze for another hour for firm scoops.
  7. Scoop into chilled bowls and serve. DUNZO!
